It’s just before summer break in Wonderland. This year I’ve decided not to produce anything for 1.5 months and to take a little break to just have a little more time for myself and the summer. Since I’m self-employed with Maras Wunderland alongside my main job as a service designer, a lot of free time is lost. And I would like to bring more of that back into my life. And that’s why we won’t be baking, cooking or taking photos for a while. But I still have three recipes for you. And the first, an absolutely magnificent summer dessert, is what I’m serving you today: a quick berry dessert – consisting of a fluffy, light cream, a berry compote and granola. I love this combo! Fruity, fresh and a bit crunchy. Plus it’s light and healthier. Totally mine! And that’s why I hope, of course, to inspire you with it too. So here are all the facts at a glance:

Healthy summer recipe: quick berry dessert
I didn’t make the granola for the recipe myself, but used a sugar-free oat granola from the organic market, which I really like. So you can simply use your favorite granola here or make your own. I also have suggestions straight from Wonderland: banana oat granola or granola with coconut. Love both of them very much, but in this case I had fully intended to produce it on time. Granola is actually super quick and easy to make. It’s definitely worth trying out. 🙂 For the cream I chose light ingredients and used low-fat quark and coconut yoghurt instead of mascapone or cream. Of course, you can choose any type of yoghurt and quark here and make it vegan very easily. I think the coconut note goes great with the berries and makes the whole thing even more refreshing and summery. For the berry compote itself I used frozen berries. This means you can easily eat it all year round. As always, I sweetened both cream and compote with erythritol. This saves sugar and calories. You then simply layer both in glasses, put a little granola on top and decorate with berries and mint. The whole thing is already finished. Really super simple and incredibly tasty at the same time. This is what summer tastes like, friends! I’ll be happy if you try it out 🙂
Recipe: healthy, quick berry dessert
This berry dessert is quick to make and healthier at the same time. Perfect dessert for summer.

Put the frozen berries in a pot with the orange juice, vanilla extract and erythritol and bring to the boil briefly. Sift the cornstarch into the mixture and stir in. Remove from heat, transfer and let cool.

Mix all the ingredients for the cream.

Pour the compote into glasses alternately with the vanilla cream. Cover with granola and decorate with berries and mint as desired.
