And again Pasta dish (For me the gnocchi from the other day also counts as pasta). Somehow I’m getting more and more of a taste for hearty dishes for Wonderland. Maybe also because the playing field is much larger there. There are now hundreds of sweet recipes here. Which is crazy, because there are actually more than 600 – and almost 800 in total. Created within the last 12 years. Insane. That would be a very thick baking and cookbook. 😀 But back to the topic. What I serve you today: Vegan pumpkin pasta. With spinach, pumpkin seeds and, if you like, some (vegan) feta. Healthy, made from simple ingredients, creamy and incredibly tasty. I could have fooled myself again. But before I go into more detail, I’ll first list all the facts for you at a glance:

Delicious after-work meal: pasta in pumpkin sauce with spinach
Of course, you can choose the type of pasta you want for the dish. I wanted to add a little more protein to the whole thing so I chose chickpea noodles. This means they are a bit more orange and darker in the pictures. In principle, any type of pasta goes well with it. For the sauce, I made it easy for myself and bought pumpkin puree from a jar. This means the whole thing is super quick – especially in the evening when you don’t want to stand in the kitchen for long. Of course, you can also make your own puree from Hokkaido pumpkin. In this recipe for my Pumpkin Handpies I explained how to do it. While the pasta is cooking, you can prepare the sauce. Basically, you just gradually add everything to a pan and let it simmer for a few minutes – depending on how you want the consistency. Then add the pasta and spinach and you can serve the whole thing. I think roasted pumpkin seeds are a must. And if you like, you can also add some (vegan) feta – I think it works really well here because feta is as nice and creamy as the sauce. Recipe: Vegan pumpkin pasta
This vegan pumpkin pasta is vegan, healthy and super creamy. A quick recipe for after-work cooking with pumpkin and spinach and optionally feta.

Shallot - 1
clove of garlic - 2

Cook the pasta in salted water according to the package instructions – remove from the water about 1-2 minutes before it is al dente.
- Chop onions and garlic small.

Heat oil in a pan and first fry the onions briefly, then add the garlic and curry paste and fry briefly.

Add pumpkin puree, water, vegetable stock powder and coconut milk, mix well and simmer over medium heat for about 5 minutes (until the desired consistency is achieved). Season with salt and pepper.

Stir the pasta into the sauce. Finally, briefly stir in the baby spinach (it should barely fall apart), sprinkle with pumpkin seeds and optionally feta and serve.
