  • 175 G Fresh nettles Washed (preferably young shoots)
  • Hot water to blanch
  • 25 G butter
  • 1 Shallot peeled & finely rolled
  • 2 Cloves peeled & finely rolled
  • 1 El flour
  • 200 ML Cooking water from blanching 100 ml for pureing the nettles / 100 ml to deglaze
  • 100 ML cream
  • Salt Pepper, nutmeg to taste

Blanch nettles:

Prepare nettle puree:

Bind:

  • Dust with flour and sweat briefly, be careful that the flour remains bright. Then deglaze with 100 ml of cooking water and stir thoroughly.

Nettle spinach is immediately finished:

  • Add the nettle puree and cream, stir thoroughly and bring to the boil briefly. Season with salt, pepper and nutmeg.

5 Tricky tips

  1. Store cooking water: Perfect for pouring balcony or garden plants- full of minerals!
  2. Collect nettles correctly: Use only the upper young shoots, if possible in clean areas away from streets.
  3. Vegan possible: Simply replace the cream with oat cream and the butter with herbal margarine.
  4. Würzupgrade: A splash of lemon juice makes the spinach even fresher and finer.
  5. More wild herbs: Giersch, dandelion or young spinach also go perfectly!
