Lemony fresh and light with curd – without egg!

For the glasses

  • 100 G Spoon biscuits approx. 12 pieces
  • 3 More spoon biscuits for the rabbit ear decoration

For the lemon lemoncello syrup

For the cream

  • 250 G Spline or crème fraîche
  • 250 G quark 20 %
  • 1 Packet bourbon vanilla sugar
  • 50 G Icing sugar
  • 1 Bio-lemon, of which the abrasion
  • approx. 1/3 of the prepared lemon lemoncello syrup

For the decoration

  • Fresh lemon zest
  • Edible flowers
  • Halved spoon biscuits as rabbits
  • Powdered sugar for dusting optional

Cooking syrup:

  • Heat the water with sugar in a small saucepan until the sugar has completely dissolved. Add the lemon juice and simmer for 5 minutes on a gentle heat. Finally stir in the lemoncello, remove from the heat and let it cool.

Mix the cream:

  • Stir the source, curd cheese, vanilla sugar, powdered sugar and lemon zest. Fold about 1/3 of the cooled syrup. Adjust the sweetness with a little more powdered sugar if necessary.

Layer glasses:

  • – Break 2 spoon biscuits in the middle, place on the floor of each glass

  • – drizzle with 2–3 teaspoons of syrup

  • – give some cream about it

  • – Place 2 halved spoon biscuits on top, soak again

  • – top with the cream

Deco on top:

  • Put two spoon biscuit halves into the cream as “rabbit tubes”. Dust with powdered sugar with fresh lemon zest, small edible flowers and – for all sweet snaps – with powdered sugar 💖

  • Cool and let go:

  • Let the finished filled glasses pull through in the refrigerator for at least 1 hour.

✨ 5 Tricky tips

  1. To prepare well: The glasses can be prepared well the day before – since no fresh eggs are used, you do not need to think about the durability.
  2. For many guests? Simply calculate the amount of ingredients and lay the dessert in a baking dish instead of in glasses – perfect for the big round!
  3. Without alcohol: Simply replace lemoncello with more freshly squeezed lemon juice in the syrup – stays wonderfully fresh and lemon and non -alcoholic when, for example, eating children.
  4. Even more fruity: In between, layer a few fresh berries or TK berries-that gives a great splash of color and freshness.
  5. Extra crunch: Give a few chopped pistachios or almonds on top.
