Vegan apricotist-the perfect Easter biscuits
How good is apricot junk! The wonderfully vanilla, vegan plunder particles are the perfect Easter recipe if you want to prepare a delicious snack with a wow effect as easily and quickly as possible. Because the vegan plunder particles are easily made with puff pastry, some pudding and pickled apricots. When you bite in, the sweet pastry has a delicious, crispy, fine edge and is wonderfully juicy and sweet inside. The taste of vanilla and fruity apricot is a brilliant combination and crushed pistachios also give the pastries crunch and nutty taste. So easy to make and sooo seductive.

You could of course also top the plunder particles with other types of fruit. But for the vegan Easter, I consciously opted for halved, pickled apricots. Because these also give the lobsters a sweet “mirror egg look” and the opportunity to easily conjure up a sweet Easter surprise on the table. Not a long baking, not a big shopping – with these pretty plundering pieces you have a snack ready in no time that spreads “Easter feeling” and just tastes really good.

Incidentally, “real plunder dough” is made from a yeast dough in which butter or margarine is incorporated into a complex process. Hence the naming: “Plunder” originally comes from the word “plus”, because Plunderteig becomes “fluffed up” by the incorporated fat when baking, beautifully crispy and “leafy-fine”. But with a vegan puff pastry that you get in almost every supermarket and also in the discounter, you achieve the same effect. Vegan apricot tumor piece

Instructions
Drain the apricot halves and collect the juice in a sieve. Provide six apricot halves. Tip: We use the juice to brush the apricots after baking. Then they shine nice and juicy. You can then use the rest of the juice and other apricots for porridges, mueslis or other sweet breakfasts.
Put 50 ml soy vanilla milk in a cup and completely dissolve 20 g cornstarch in it by stirring. Heat the remaining soy milk in a saucepan and stir with 2 tablespoons of cane sugar and ground vanilla.
As soon as the vanilla milk is hot, stir in the proportion with the dissolved cornstarch. Reduce the heat and have vanilla pudding thickened for about 2 minutes while stirring. Then take from the stove.
Preheat the oven to 220 degrees top/bottom heat
Unzip the puff pastry and cut into 6 equally large parts. Place the puff pastry pieces side by side on a baking sheet covered with baking paper and brush with a little apricot jam.
Then fold the corners of the dough pieces to the middle and press the tips slightly there.
Then add 2 tablespoons of pudding to the middle of each dance piece and press half apricot with the curve up. Perform the edge of the biscuit piece with a little plant drink or apricot jam and optionally sprinkle with hail sugar.
Bake the apricotist tires in the preheated oven at 220 degrees upper/bottom heat for around 15 minutes until they rose nicely and golden brown.
In the meantime, crush 2 tablespoons of pistachios in the mortar and sprinkle the finished apricot pads with it. It is best to enjoy your vegan “Spei-Gelei-bäsfär”.
