  • Prepare the pasta according to the package.

    300 g pasta

  • Halve tomatoes. Wash rocket.

    200 g small tomatoes, 100 g arugula

  • Roast the pine nuts in a small pan with fat -free.

    20 g pine nuts

  • Put the pasta, tomatoes, rocket, pine nuts and mozzarella in a bowl and mix with green pesto.

Ingredients for pasta salad with pesto

The pesto noodle salad is a real flash recipe and a great side dish for grilling. You only need for the recipe 6 ingredients. So that you are even more flexible, I show you how you can replace the ingredients.

  • Pasta
    I prefer to use penne. Other short pasta varieties, such as Fusilli or Rigatoni, also fit. If you want to make some variety, you can also use Spaghetti. That is also great.
  • Tomato
    If you don’t have fresh tomatoes in the house, you can also use dried tomatoes from the glass. Or fresh, small diced peppers.
  • Mozzarella
    I love the little Mozzarella balls. So you save yourself the cutting and the salad is prepared even faster. You don’t have Mozzarella in stock? Then take simply grated parmesan.
  • Arugula
    Spicy arugula just fits my salad perfectly. You can replace it with basil and also lamb’s lettuce.
  • Pine nuts
    Pine nuts just go well with salads. If you don’t have any in the pantry, you can also exchange them with walnuts or cashew nuts.
  • Pesto
    I use a green basil pesto for my pasta salad. But a wild garlic pesto or a red pesto Rosso also fit well.

  1. First prepare the noodles according to the package.
  2. In the meantime, halve the tomatoes and wash the arugula. Then roast the pine nuts in a pan -free.
  3. Finally, add the pasta, tomatoes, mozzarella, arugula, pine nuts and pesto together and mix together.

Meal prep tip: The salad stays in the fridge for up to 2 days. I recommend that you admit the arugula shortly before eating.
