Ingredients

For the oven porridge

  • 2 Banana
  • 250 G Fine oatmeal
  • 1 scoop Protein powder (neutral or vanilla) Optional! Otherwise just take 1 tablespoon of oatmeal
  • 2 Tin Shrotted flax seeds
  • 50 G Pecans Or walnuts
  • 120 G carrot grated/opened
  • 1 TL baking powder
  • 2 TL Cinnamon
  • 2 Tin Maple syrup
  • 450 ML Plant milk

For frosting

  • 70 G Cashew nut (soaked overnight)
  • 150 G Coconut = The fixed proportion of a chilled can of coconut milk
  • 1 Tin Maple syrup
  • 1 TL Vanilla, ground
  • 1 str. TL Guarkern meal For better binding

For topping

  • 35-40 G Pistachios, chopped
  • 1 Tin Maple syrup To drizzle (optional)

I used a baking dish with the dimensions 30×23 cm for this recipe. It works great, but I found it a little big. Feel free to use a slightly smaller baking pan, then the porridge cake will also be a bit higher.

Instructions

  • Attention: The cashew nuts for frosting should be soaked in water overnight or at least 4 hours.

  • Crush the bananas creamy with a fork and mix with the oatmeal, optional protein powder, screamed flax seeds, chopped pecans (or walnuts), carrot grated, baking powder, cinnamon, maple syrup and plant milk in a baking dish.

  • Smooth out the dough and swell for about 15 minutes.

  • Preheat the oven to 180 degrees.

  • Bake oatmeal dough at 180 degrees for around 38-40 minutes.

  • In the meantime, cashew nuts, 150 g of coconut cream, 2 tablespoons of maple syrup, 1.5 teaspoons of guar flour and ground 1 teaspoon of vanilla in the mixer puree and chill.

  • Let the baked carrot porridge cool down a bit, brush with the coconut cream, sprinkle with chopped pistachios and enjoy drizzled with maple syrup or agave syrup.
