Peel white asparagus. Cut off the woody ends from the green and white asparagus. Halve asparagus poles at an angle.

Boil a saucepan with water, salt and cook the white asparagus for 7 minutes over low heat. Add green asparagus and cook for 3 minutes. The asparagus should still be bite -proof. Drain and put it off cold.
Whisk, eggs and cheese in a bowl and season with salt, pepper and nutmeg. Put the mass on the quiche dough and spread the asparagus over it. If you like, you can distribute a little more cheese on the quiche.

Together this results in a great covering for the quiche. My tip: When shopping, you can see fresh asparagus that the poles are firm, have a bright cutting surface and squeak when rubbing together.

- Bake quiche: Spread the sour cream eggs on the bottom of the quiche and spread the asparagus over it. Then the quiche can be baked in the oven.
